As many of you know by now, I have been working my butt off trying to lose weight and get fit. Although I know that losing weight is on almost everyone’s New Year’s resolution list, I started my amazing journey at the beginning of December. I recently wrote a blog post about How I Lost Over 10lbs In A Month: My Workout Routine & Essentials and now I’m proud to say that I’ve managed to lose 15lbs in total! If I lose another 6lbs, I’ll be back to my weight when I was a model, which was my weight about 10 years ago! Cross your fingers for me! Here’s to hoping!

Of course, we all know that dreams don’t happen unless we do something about them, so with that being said, I’ve had to change a bunch of little and big things about my diet to make this all possible.

Being a vegetarian since I was a kid has always had its challenges for me. I have never been a vegetarian that craves meat or sees it and says “wow! That looks so good!” haha it’s actually quite the opposite. I’ve never liked meat, even when I was a kid my mom would fight with me over eating it. So that’s never been a problem that I feel like many of my friends who are vegetarians have. My challenges with being a vegetarian always came from a lack of protein.

Protein is a very important factor in one’s body. Protein gives you energy and helps make you feel full. It’s also important for muscle building and also plays a huge factor on your nails, hair and skin. If you want to know more about why protein is so important to you, CLICK HERE. 

Throughout my life, I have struggled with not eating enough protein. I would notice it when my nails would never grow and when they did they would break pretty fast because they weren’t strong enough. If I had a scar or a cut on my skin, it would take forever to heal and the worst one of them all is my hair, my hair basically never grows. While most of these things are more noticeable on the outside, another problem I’ve always had was feeling weak and tired because of my lack of protein.

While I never liked meat, one thing that I’ve always always loved is eggs. I grew up in a house where eggs were served for dinner with tomatoes, cucumbers, avocado and different kinds of cheeses. That’s what Israelis eat for dinner and breakfast.

In the past 2.5 years, I have become basically vegan due to finding out I was extremely allergic to dairy. So I never really know what to categorize myself as but if you ask me, I say I’m vegan except I eat eggs (and love them!).

Since working out and changing my diet, I knew I had to obtain a certain amount of protein in my daily diet to not get sick, not feel weak and to build those muscles! For this, I mainly rely on eggs!

Every day after my workout, I always eat eggs. Depending on my hunger level I’ll have 2-3 eggs a day.

However, we all know that while eggs are a great source of protein, they are high in cholesterol. I always knew that the white part of the egg was always the healthiest but I don’t think I ever really tried it alone while eating eggs up until most recently and I’m literally in love. No joke, today I made scrambled eggs twice with it, including 2 mins ago as I was in the middle of writing this article. I love the way it taste and smells. Breakfast Bruschetta Recipe 

YUM! YUM! YUM!

So to make life easier, I created a fun, easy and healthy breakfast dish for you to try. It literally took me 5-7mins to get together. Super easy!

Introducing my breakfast bruschetta! 

What you’ll need:

First, I start with the AllWhites 100% Liquid Egg Whites and make scramble eggs measuring 3.5 eggs. 3 tablespoons equal 1 egg. (it says it on the box)

After my eggs are ready, I let them cool off for a few seconds, meanwhile, I cut my whole grain loaf of bread. I honestly think that there is nothing like a fresh loaf of bread in the morning. Although I barely eat bread like I used to, if you’re going to treat yourself you might as well go all out and get a freshly baked loaf of bread. They have them at all your local markets.

Then I cut my avocado into half and spread it on the piece of bread. Since I’m a huge pepper lover I sprinkle some pepper on top of the avocado and a small amount of organic sea salt.

I then cut some chives for some extra flavor and also add them on top of the avocado.

Then I take my scrambled egg whites and place them on top of the bread.

I get a hand full of organic cherry tomatoes and also add them on top of the eggs, followed by a basil leaf.
